Ingredients :
3 cups filtered water
2 tablespoons white miso paste
1 teaspoon tamari or coconut aminos (optional, for added depth)
1 green onion, thinly sliced'
1/2 cup sunflower microgreens
1/2 cup pea shoots or tendrils
1/4 cup radish microgreens
1/4 cup broccoli microgreens
1/4 cup onion microgreens
Optional garnish: sesame seeds, chili flakes, or a drizzle of toasted sesame oil
Instructions:
Warm the Broth
In a small saucepan, bring the water to a gentle simmer (do not boil). Remove from heat.
Add the Miso
In a separate bowl, mix the white miso paste with a few tablespoons of the hot water. Stir until smooth, then return the miso mixture to the pot. Add tamari if using. Stir gently to combine.
Assemble the Soup
Divide the sliced green onion between two bowls. Pour the miso broth over.
Top with Microgreens
Generously layer the sunflower microgreens, pea shoots, radish, broccoli, and onion microgreens on top. Let them wilt slightly in the warmth of the broth.
Optional Garnish
Sprinkle with sesame seeds, chili flakes, or a touch of toasted sesame oil for extra flavor.
