Microgreens Salad with Creamy Zesty Dressing

Ingredients:

  • 2 cups mixed microgreens (like radish, pea shoots, and sunflower)

  • 1 cup cherry tomatoes, halved

  • 1/2 cucumber, thinly sliced

  • 1/4 red onion, thinly sliced

  • 1/4 cup shredded carrots

  • 1/4 cup pumpkin seeds (optional)

Lemon-Tahini Dressing:

  • 2 tbsp tahini

  • 1 tbsp lemon juice

  • 1 tbsp olive oil

  • 1 tbsp maple syrup or agave

  • Salt and pepper to taste

  • Water (to thin the dressing)

Instructions:

  • In a large bowl, combine the microgreens, cherry tomatoes, cucumber, red onion, and shredded carrots.

  • For the dressing, whisk together tahini, lemon juice, olive oil, maple syrup, salt, and pepper. Add water slowly to reach your desired consistency.

  • Drizzle the dressing over the salad and toss gently to combine. Top with pumpkin seeds if desired.

  • Serve immediately and enjoy the freshness!
