Microgreen Salad

Fresh Ginger-Lemon Slaw with Purple Cabbage & Microgreens

Ingredients:

  • 1/2 inch fresh ginger, peeled and grated

  • Zest of 1 lemon

  • 1/4 cup extra virgin olive oil

  • Salt and pepper, about ¼ teaspoon each (adjust to taste)

  • 1/2 head purple cabbage, thinly sliced

  • 1/2 head onion, thinly sliced

  • 2–3 cups mixed microgreens (such as radish, fennel, cilantro, amaranth, or pea shoots)

Instructions:

  • In a small bowl or jar, combine the grated ginger, lemon zest, olive oil, salt, and pepper. Stir or shake well to blend.

  • In a large mixing bowl, combine the cabbage, red onion, and microgreens. Drizzle the dressing over the top and gently toss until evenly coated.

  • Serve immediately.
