Vegan Microgreen Avocado Toast

Avocado Toast Reinvented with Microgreens

Ingredients:

  • 2 slices whole grain or sourdough bread

  • 1 ripe avocado

  • 1 cup microgreens (arugula, radish, or mustard greens work well)

  • 1 tbsp lemon juice

  • Salt and pepper, to taste

  • Crushed red pepper flakes (optional)

Instructions:

  • Toast the bread slices to your preference.

  • While the bread is toasting, mash the avocado in a bowl with lemon juice, salt, and pepper.

  • Spread the mashed avocado evenly over the toasted bread.

  • Pile on a generous amount of microgreens on top.

  • Sprinkle with red pepper flakes for a little heat, if desired. Serve immediately.
