Ingredients:
2 slices whole grain or sourdough bread
1 ripe avocado
1 cup microgreens (arugula, radish, or mustard greens work well)
1 tbsp lemon juice
Salt and pepper, to taste
Crushed red pepper flakes (optional)
Instructions:
Toast the bread slices to your preference.
While the bread is toasting, mash the avocado in a bowl with lemon juice, salt, and pepper.
Spread the mashed avocado evenly over the toasted bread.
Pile on a generous amount of microgreens on top.
Sprinkle with red pepper flakes for a little heat, if desired. Serve immediately.
