Green Power Bowl with Tofu, Edamame & Microgreens
Clean Eating, Bold Flavor: The Ultimate Green Power Bowl
Ingredients:
½ cup baked tofu cubes, marinated in tamari, garlic, and maple syrup
¼ cup edamame, steamed and lightly salted
¼ avocado, sliced or halved, topped with sesame seeds & everything bagel seasoning
¼ cup cucumber, thinly sliced vertically (fan-style)
¼ cup shiitake mushrooms, sautéed or marinated
1–2 tbsp shredded daikon radish (or watermelon radish), for crunch
½ cup pea shoot microgreens (or a mix including arugula microgreens)
1 cup mixed greens or baby spinach
1 tbsp olive oil or sesame oil
Optional: tamari, ponzu, or miso-ginger
Instructions:
Prepare the tofu: Cube extra-firm tofu, marinate for 15 minutes in tamari, garlic, sesame oil, and maple syrup. Then bake at 375°F for 20–25 min until golden.
Sauté mushrooms: Lightly sauté sliced shiitake mushrooms with a dash of tamari and oil.
Steam edamame: Boil or steam edamame pods, then shell and lightly salt them.
Build the bowl: Layer a bowl with mixed greens, then add tofu, mushrooms, edamame, radish, cucumber, and avocado artfully in sections.
Garnish: Top generously with pea shoot microgreens or a medley of your farm’s finest.
Dress and serve: Drizzle with olive oil or your preferred dressing and enjoy immediately.
